We had our first meeting to discuss our requirements for a menu for 150 people aboard the SS Great Britain, about 8 weeks before hand. The brief was a 5-course celebratory meal to pair with the fantastic champagnes of Moet et Chandon. We discussed logistics, the catering area at the venue is small – as are our Cellars where Tom had also produced sit down meals before.

Then the most important bit – the matching – we had some initial ideas – and Tom put forward his comments based on those but using local in season produce and bringing his own unique twist to each - Here we had Visual Wow’s textual intrigue, and the food matched the wine – but above all the menu was amazing. Did exactly what was required, and was completely faultless.

"We approached Tom Green back shortly after signing the lease for our first restaurant premises. The following months building up to our launch date were fraught with all the usual pressures associated with opening your first hospitality business. Toms guidance throughout this process was invaluable. He helped us design and procure equipment for a fully functioning commercial kitchen working with a very limited budget to an incredibly tight timescale. He really understood what we were trying to achieve with our offering, his menu conception reflected his passion for food and our brand perfectly. The kitchen team he recruited were equally passionate and the energy he brought to training was boundless. "We have been using Tom Greens services for over the past 8 years. My favourite Tom Green story is from a few years ago when I asked him to cater for a Christmas drinks reception for 90 people. He produced a mouth watering menu and I had made sure that the house looked suitably festive. The weather forecast was abominable. 80mph winds and heavy rain was forecast to start at 6pm, just before guests arrived. Tom and his team were coming from the other side of Bristol and I was in a state worrying that he would struggle to get to us. Just like clockwork, Tom arrived with a cheerful smile on the dot at 5pm with canapés and his team in tow. 

Tom is the ultimate professional, and he is passionate about food. He is calm and confident which is what I love about him. I always feel that once he is ensconced in my kitchen, I can go off and enjoy my own party and know with absolute confidence that he will wow all of my guests with his beautiful food.  He is just the best."
